    Facility lacks sanitizer test strips for chlorine and quaternary ammonia. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

  • K40: Wiping cloths: properly used, stored

    Observed wiping cloths are stored in buckets without sanitizer. [CA] Wiping cloths shall be stored in approved sanitizing concentration when not in use.

  • K14: Food contact surfaces clean, sanitized

    1. Measured the quaternary ammonia sanitizer concentration in the 3-compartment sink above 400 ppm. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. 2. Observed accumulation of brown mold-like substance in the interior panel of the ice machine. [CA] Routinely clean and sanitize the ice machine. Food contact surfaces shall be kept clean.

    In the preparation unit, measured guacamole with cut tomato at 58F. Guacamole is stored in a metal container above the insert coolers. Per staff, guacamole was prepared and moved to refrigeration 3.5 hours prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] Guacamole was moved to the under counter refrigeration unit for rapid cooling.
