    In the 2 door upright refrigerator, bag of brown rice measured at 65F. Per operator, brown rice was stored in the refrigerator less than 2 hours prior for rapid cooling. [CA] Properly cool PHF's using shallow containers, using no more than 2 inches for solid foods and no more than 4 inches for liquids. When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling. Ensure food is properly stored in the refrigerator to allow proper air flow. [COS] Brown rice was transferred to a shallow pan and placed on top shelf of refrigerator for rapid cooling.
