    Large chaffing dishes of rice observed to be stacked 3 high in kitchen on top of skillet. Rice measured to be 136F. Per employee rice is to be cooled and used tomorrow and was pulled at 10:00AM ( about 1.5 hours prior). [CA] [CA] Properly cool PHF's using shallow containers, using no more than 2 inches for solid foods and no more than 4 inches for liquids. Food shall be left uncovered or loosely covered to allow rapid cooling and unstacked to allow for air flow and heat transfer. [COS] Per employee rice trays were there temporarily to prep and cook pizzas. Rice trays were spread out and lids were removed. Recommend placing rice trays at the top of speed racks to make room for prep on countertop.
