[CA] Properly cool PHF's using shallow containers, using no more than 2 inches for solid foods and no more than 3 inches for liquids. Cool food rapidly from 135-70F in 2 hours, 70F-41F in 4 hours. [COS] Soup was split up in 2 containers with ice bath and ice wands.
