Spoke with manager, Jason, over the phone. Per manager, facility no longer conducts roasting on-site. - K40: Wiping cloths: properly used, stored
Observed soiled wiping cloths stored directly on preparation counters. [CA] Wiping cloths shall be stored in an approved sanitizing concentration when not in use.

Observed accumulation of black mold-like substance in the interior panel of the ice machine. [CA] Food contact surfaces shall be routinely cleaned and sanitized.

On the preparation counter, measured housemade mayonnaise at 70F and cooked cabbage patty at 67F. Per employee, mayonnaise was removed from refrigeration and cabbage was cooked about 1 hour prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] Mayonnaise was relocated into the preparation unit. Recommend to keep mayonnaise in ice. Cabbage patty was voluntarily discarded.

Observed shelled eggs stored over ready-to-eat foods (avocado, etc.) in the 2-door upright cooler. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items.

Facility lacks active Food Safety Certification. [CA] Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times.

Facility lacks testing materials for chlorine sanitizer. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

1) Observed the use of countertop convection oven (Vollrath, Cadco) in the kitchen area without ventilation or approval from this department. [CA] Provide approved exhausted hood ventilation over all cooking equipment as required to effectively remove cooking odors, smoke, steam, grease, heat, and vapors. Facility to relocate oven under the hood or apply for hood exemption to Plan Check Department. 2) Observed the use of domestic toaster oven in the front service area. [CA] All food equipment shall be certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation).

Observed working utensils near the cookline and near the ice cream chest are stored in standing water. [CA] Utensils shall be stored in the following manner: 1) in the food with their handles above the top of the food and the container, 2) in running water, 3) in a container of water at 135°F or above, 4) at room temperature if washed within 4 hours of initial use.
