    Measured the chlorine concentration in the mechanical dishwasher at 0 ppm. No active warewashing at the time of inspection. [CA] Mechanical sanitization shall be accomplished in the final sanitizing rinse with 50 ppm chlorine, or as per manufacturer's specifications. [COS] PIC adjusted the chlorine tube for mechanical dishwasher during inspection. Retested the mechanical dishwasher at 50 ppm chlorine.

  • K33: Nonfood contact surfaces clean

    Observed food debris and grime buildup on food preparation counters and storage shelves. Observed accumulation of dust in the ventilation hoods. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

  • K23: No rodents, insects, birds, or animals

    Observed several drain flies throughout the warewashing area and food preparation area. [CA] The premises of a food facility shall be kept free of vermin and other non-disease carrying insects.

  • K44: Premises clean, in good repair; Personal/chemical storage; Adequate vermin-proofing

    Observed gap between the wall and attic as the door to attic is not properly closing. [CA] Seal all gaps in the facility. The facility shall be fully enclosed to prevent pest entrance and harborage.

    At the mechanical warewashing area, the floor sink appears to be clogged or improperly draining. The water flows from the floor into nearby drain if the 3-compartment sink are turned to maximum pressure. [CA] Liquid waste shall be properly disposed through the approved plumbing system. Ensure that water drains into the floor sink and does not overflow onto the floor.

    At the mechanical warewashing area, observed drainpipe extends directly into the floor sink. [CA] Provide air gap between the drain pipes and floor sink that is at least twice the diameter of the inlet and no less than 1 inch.

[Corrective Action] Ensure chlorine sanitizer concentration is maintained at 50 ppm in the dishwasher. Do not use dishwasher for warewashing until it has been serviced. Use the 3 compartment sink to sanitize.

    Observed a few missing baffles in the exhaust hood. [Corrective Action] Ensure baffles are installed in the exhaust hood to prevent accumulation of grease in the exhaust duct.

    Observed the dumpster lid left open. [Corrective Action] Ensure dumpster lid is kept closed when not actively dumping trash. [Corrected on Site] PIC closed the lid.

    The floor sink under the ice machine is clogged and liquid waste from the ice machine is overflowing into the floor drain. [Corrective Action] Ensure floor sink is properly draining.
