    Quaternary ammonium measured at 100pp in the back room 3 composition sink. [CA] Maintain chemical solution for manual warewashing at 200 ppm for quaternary ammonium.

  • K07: Proper hot and cold holding temperatures

    1) In the single door under counter cooler: hot dogs measured 46F. Manager stated that hot dogs were stored in unit over night. 2) Ranch dressing and garlic sauce measured 46-47F in the 2 door preparation cooler. Food items stored more than 4 hours. [CA] Potentially hazardous foods shall be held cold at 41°F or below. [COS] All food items were voluntarily discarded.

    1) Large hole in wall of back room (near 3 comp sink). 2) Floors in back storage area have an accumulation of dried food debris. [CA] Repair holes in structure and maintain in good repair to prevent pest harborage. Routinely clean floors and under refrigeration units to prevent accumulation of debris.

    Water temperature at the 3-comp sink was measured at less than 120F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks (100F).

  • K14: Food contact surfaces clean, sanitizedCritical

    1- Quat sanitizer concentration was measured at 0ppm at the 3-comp sink in the front area. and less than 200 ppm at the 3-comp sink in the back area. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] There is some issues with the sanitizer plumbing in the 3-comp sink at the front, employee was able to refill the sanitizer container in the back area. Sanitizing will be done in the back 3-comp sink while the front 3 comp sink is being repaired. 2- Mold like substance build up inside the ice machine. [CA] Clean and sanitize routinely to prevent contamination.
