1. Tahdig (crispy rice) was measured at 82°F while stored on a prep table. Per PIC, they serve it at room temperature. 2. Saffron Rice was measured at 108F on the prep table. [CA] Potentially hazardous foods shall be held at or below 41°F or at or above 135°F. [COS] PIC agreed to place products on time as a public health control and time marked it for discard at 3:00 pm.
