    Grab n go cooler on the most left line observed to have been left cracked open and measured to have: -Milk at 45F -Salad w/ sliced eggs at 49F -Ambient temperature at 53F [CA] Maintain temperature of PHF at 41F and below for cold holding. Ensure cooler is kept closed. [COS] Cooler was closed and shall be monitored. Per employee she had just stocked cooler in the last 30 minutes. Per operator, if unit is still out of temperature at the end of all lunch periods (within 4 hours of stocking) facility shall discard food.

    Observed dead cockroaches on the floor and sticky traps below shelfs within the warewashing room and below tables at the front serving lines. No live vermin observed at the time of inspection. [CA] Clean and sanitize area of dead cockroaches. Replace sticky traps as needed.

    Observed single use food containers stored on the floor of the exterior storage room. [CA] Food and food contact items shall be stored at least 6 inches above the floor to prevent contamination.

    Observed gaps/ holes in the wall and floor tile base boards by the meat slicer stored within the warewashing machine room. [CA] Repair holes in structure and maintain in good repair to prevent pest harborage.

    In the walk-in refrigerator, measured pizza sauce cooling in large containers at 160F. [CA] Ensure pizza sauce is cooled from 135F to 70F within 2 hours, and then from 70F to 41F within 4 hours. Cooling shall be facilitated by one or more of the following methods: in shallow containers, using ice paddles, using an ice bath, by adding ice, separating food into smaller portions, and/or using rapid cooling technology. [SA] Operator moved pizza sauce into shallow containers to facilitate proper cooling.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    In the warewash room, on the shelving below prep tables, observed the use of cardboard boxes for storage of chemicals, and a large piece of wood as a platform. In the kitchen area, observed a piece of cardboard used to line the table underneath the slicer. [CA] Discontinue use of unapproved materials and equipment such as cardboard and wood to prevent possible harborage of vermin.
