Heavy food debris noted around the FRP around the kitchen area. [CA] Clean/sanitize the walls more frequently.

Employee was seen washing dishes and did not sanitize the equipment as the final step. Active ware-washing. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [SA] Dishes will be re-washing/sanitized.

Heavy grease build up noted on the hood filters and on the hood system at the time of inspection. [CA] Ventilation hood filters shall be maintained clean and good repair. Clean more regularly.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Plastic container holding rice in the back of the facility is damaged at the time of inspection. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions. Recommend removing container from service.

Hot water was measured at 114*F at the time of inspection. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at hand wash sinks. Recommend raising the temperature on the water heater slightly.
