    Paper towels stored outside of dispensers at the cook line and employee restroom hand wash sinks. [CA] Paper towels shall be stored inside the dispenser to prevent potential contamination.

  • K01: Demonstration of knowledge; food safety certification

    Employees lack food handler cards. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

    Measured the ambient temperature of the two door preparation refrigerator at the cook line at 55 F to 60 F. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below. Discontinue use of the unit to hold PHF's. Observed the re-use of soy sauce buckets to store varius food items within the dry storage and refrigerators. [CA] Food containers intended for single use shall not be reused. Use NSF containers with tight fitting lids.

[CA] Clean and sanitize ice machine as needed to prevent the build-up of mold like materials.

    The frp wall surrounding the janitorial area is in disrepair. [CA] Securely attach frp to wall and seal cracks and crevices.
