ROUTINE INSPECTION
This facility's first routine inspection was conducted at this time. First day of operation started on 5/22/2026. *Notes: 1. Ensure all food handlers acquire their required food handler cards. Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire. 2. Facility is still currently undergoing plan check for sushi bar and dry ager installation. Facility was observed in compliance with the permit condition and no food preparation is being conducted at the sushi bar. 3. Facility currently uses temperature control for sushi rice.

Observed one bulk container of flour unlabeled in the upstairs preparation area. [CA] Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food if not easily recognizable.
- K27: Food separated and protected
Observed raw shelled eggs stored above ready to eat foods in the two door upright cooler adjacent to the two compartment preparation sink. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items.

Observed a plastic bowl used as a scoop to dispense bulk flour. [CA] Use approved utensils such as scoops or spoons with handles to ensure hands do not come in direct contact with food.

Observed thawed fish vacuum sealed to marinate in the downstairs walk in cooler. The PIC stated the fish was sealed less than 1 hour prior. [CA] Except for fish that is frozen before, during, and after packaging, a food facility shall not package fish using a reduced-oxygen packaging method. [COS] The sealed packages of fish were immediately opened. *Note: It was discussed that this facility also reduced oxygen packaging for sous vide and vacuum sealing is not used for storage or preservation. Provide written procedure for products cooked by sous-vide.
