    Measured the quat sanitizer solution at 50 ppm within a bucket used to store soiled wiping cloths at the meat department. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

    Shellstock tags for farm fresh shellfish are not held in chronological order. [CA] The identity of the source of shellstock that are sold or served shall be maintained for 90 calendar days from the dates of harvest by using an approved recordkeeping system that keeps the tags or labels in chronological order correlated to the date or dates the shellstock are sold or served.

    Build-up of grease on the floor of the outside grease disposal area. [CA] Refuse enclosure shall be kept clean of debris to prevent buildup of soil and attractants for vermin.

  • K14: Food contact surfaces clean, sanitized

    Observed employee manually sanitize a tray with the sanitizer hose only, did not allow proper contact time. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Tray properly sanitized using 200 ppm quat allowing minimum of 60 seconds contact time.

    Multiple personal drinks, lunches, bags and jackets/aprons stored on food storage shelfs. [CA] No person shall store clothing or personal effects in any area used for the storage and preparation of food or food contact surfaces. Employee's personal effects (cell phone, car keys, and jackets) shall be stored in employee lockers or other designated areas for employee storage. The back swing door to the produce area has gaps allowing the entrance of flies. Air curtain is non-functional. [CA] Air curtains shall be in operation over all open exterior doors to prevent flying pests. Fly strips in use above the produce preparation area. [CA] Insect control devices that are used to electrocute or stun flying insects shall be designed to retain the insect within the device and be installed away from the storage and preparation of food or food contact surfaces and linens.

    Thawing flat breads (PHF) at room temperature behind the meat department area. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.
