    In the warming roller, measured hot dogs from 110-115F. Per PIC, hot dogs were cooked less than 30 minutes prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] Per PIC, hot dogs were time marked to be discarded within 3.5 hours (less than 4 hours since time of initial cooking). The temperature of the warming roller was turned up during inspection.

    Actively working employees lack food handler cards. [CA] All food handlers shall maintain a valid food handler card for the duration of their employment. Food handler cards shall be available for review.
