    Chicken wings, sliced tomatoes, and chicken livers in the prep cooler measured between 48-50F. Per cook, they moved items into the cooler from the walk in around 2 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PHFs were moved back to the walk in cooler to cool down.

  • K34: Warewash facilities: installed/maintained; test strips

    1. Facility lacks testing materials for their choice of sanitizer at the three compartment sink and dishwasher, chlorine. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. 2. Facility lacks drain plugs for the three compartment sink basins. [CA] Plugs/stoppers shall be available to fill up the warewashing sink.

    Numerous rodent droppings were observed in the facility. Some were near the ice machine in the kitchen and the majority were near the dishwasher. Droppings in both areas were wet, unable to verify if droppings were fresh. Note: Areas of concern regarding harborage and entry were noted to PIC. [CA] Clean and sanitize area of droppings immediately. A follow up inspection will be conducted within 24 hours to verify compliance.

[CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.

[COS] The paper towel dispenser was restocked with trifold paper towels. 2. In the kitchen area, at the only hand wash station, there is no permanent soap dispenser. [CA] Provide handwashing cleanser in dispenser at handwash stations at all times.
