- K35: Equipment, utensils: Approved, in good repair, adequate capacity
The bottom shelves where the chips are stored has accumulated food particles throughout the length of it. [CA] Thoroughly clean the shelves. The dairy walk in has liners with indented surfaces that are accumulating mold/mildew- like growth. [CA] This liner is not recommended since it has the indented surface which makes it more difficult to properly wash and sanitize and easier to grow mold/mildew. Wash and sanitize these if they are going to be reused.
