  • K01: Demonstration of knowledge; food safety certification

    PIC and staff were unable to answer how the coffee pots and pickle tongs are sanitized. Staff showed my hand sanitizer and PIC showed a detergent for the coffee pots. [CA] All food employees shall have adequate knowledge of, and shall be properly trained in, food safety as it relates to their assigned duties. [COS] Inspector educated on proper warewashing, sanitizing, and testing the sanitizer with test strips. Three compartment sink was set up to sanitize dishes. Proper warewashing sticker was provided onsite.

  • K32: Food properly labeled and honestly presented

    Facility places pickles in a jar for self service at the counter with no labeling. Pickles are commercially prepackaged and come in a large 5 gallon white plastic container. [CA] Bulk food that is available for consumer self-service shall be prominently labeled with either of the following in plain view of the customer: 1) the manufacturer's or processor's label or 2) a card or sign with the common name of the food and list of ingredients in descending order of predominance by weight.

    Facility lacks testing materials for their choice of sanitizer. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

    There is a large storage container in the back that hold liquor only. Per Kuldip, the container has been there since they took over. [CA] Food or food related equipment shall be stored in an approved fully enclosed food facility. Futher evaluation will be required.
