    Container of raw meat stored on shelving above mayonnaise container in walk in cooler. [CA]: Properly store raw meat beneath and separate from ready to eat food.

  • K14: Food contact surfaces clean, sanitized

    1. Employee observed actively washed container lid and placed in sanitizer compartment for less than 30 seconds. [CA]: Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds. [COS]: Employee re-washed and re-sanitized container lid for at least 30 seconds. 2. Washed and wet containers stacked on top of each other. [CA]: Equipment and utensils must be properly air dried after sanitizing and prior to stacking.
