Ice scoop handle was inside the consumable ice. [CA] Store scoop handle in such a way that the handle does not come in direct contact with food to prevent contamination.
- K26: Approved thawing methods used; frozen food
Frozen Tuna piece was left on the food prep sink side board. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process. [COS] Frozen tuna was shifted to refrigeration.

Facility is cooking with out filters on for the mechanical exhaust hood. [CA] All hood ventilation filters shall be in place and in good repair before start cooking.

Container of rice measured 43F was cooked this morning and placed inside the refrigeration with foil and lid. [CA] When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling with proper air flow. Can cover food once it reaches 41F.

Health permit issued was not posted in a public view. [CA] The health permit issued by this department shall be posted in a conspicuous place in the food facility.

Lack water for the bar sink. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks. Fix/repair pluming problem . Bar dishwasher machine is leaking water. [CA] Repair/fix leakage from a dishwasher to maintain.

During the inspection Chef was found coughing. Per chef, he smokes a lot; therefore, cough. [CA]Food employees are not allowed to work with exposed food, clean equipment, clean utensils, or clean linens while experiencing persistent sneezing, coughing or runny nose that is associated with discharges from the eyes, nose or mouth that cannot be controlled by medication. [SA] Apply mask while working in kitchen area.

Hot water was measured 85F at the hand washing sink inside the restroom. [CA] Handwashing facilities equipped with a mixing valve that is not readily adjustable at the faucet, shall provide warm water at least 100°F, but not greater than 108°F.

Bar dishwasher lack sanitizer. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM or 200 PPM for quaternary ammonia. [COS] Empty sanitizer gallon was replaced.

Lack probe thermometer. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.
