    Observed the back handwashing sink basin blocked by equipment and without paper towels. [CA] Handwashing facility shall be clean, unobstructed, and accessible at all times. Handwashing facilities shall be equipped with handwashing cleanser and single-use sanitary towels in dispensers.

    Observed multiuse plastic containers at the drying racks wet stacked with visible accumulation of water between the containers. [CA] Equipment and utensils must be air dried or properly stored to facilitate drying after sanitizing.

  • K21: Hot and cold water available

    Measured the maximum water temperature at the front hand washing sink at 66F and 80F at the back hand washing sink. [CA] Handwashing facilities equipped with a mixing valve that is not readily adjustable at the faucet, shall provide warm water at least 100°F, but not greater than 108°F. [COS] The hot water supply valve was opened to provide a water temperature of 108F.

    Observed stack of trays in front of the handwash sink next to the warewashing area, preventing access to the faucet. [CA] Handwash sink shall be accessible and unobstructed at all times. [COS] Employee moved trays away from sink.

  • K36: Equipment, utensils, linens: Proper storage and use

    Observed pizza cutting utensils stored in standing water with ice. [CA] Discontinue storage of working utensils in standing water. Working utensils shall be stored in the following manner: 1) in the food with their handles above the top of the food and the container, 2) in running water, 3) in a container of water at 135°F or above, 4) at room temperature if washed within 4 hours of initial use.
