Per PIC, all the items were prepared or stored in refrigerator units at 1 PM.
[CA] PHFs shall be held at 41°F or below or at 135°F or above.
[COS] PIC used time stamps to use or discard these items umtil end of 4 hours from when it was taken out of temperature control.
