  • K07: Proper hot and cold holding temperatures

    1. In the reach in cooler, at the right most door, cooked eggs were measured at 44°F and carne asada was measured at 46°F. Per staff, they cooked the eggs yesterday and have had the reach in cooler open since they were switching items for the dinner service. 2. In the kitchen area, on the top section of the prep cooler resting above the inserts, a bowl of cheese was measured at 48°F. Per staff they placed it there about 20 minutes prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] 1. The doors of the reach in cooler were kept closed for 5 minutes and eggs remeasured at 41°F. Ambient air measured at 40°F. [COS] 2. The bowl of cheese was moved to the reach in cooler to cool down. Recommend placing cheese into one of the inserts and storing non- PHF in the bowl.
