Per Staff, hotdogs have been in the unit all night, taken out approximately 1 hour prior to measurement for approximately 3 minutes then placed back into the unit. Ambient temperature of unit measured at 44 F. PIC unsure how long unit has been measuring above 41F. [CA]: Potentially Hazardous Food shall be cold held at 41F or below at all times. [COS]: Hotdogs voluntarily discarded.

    3 comp sink's wastewater drain pipe is misaligned in which some wastewater is spilling out of the floor sink during active use. No sewage backup. Maintain 1 inch air gap between floor sink rim and drain pipe.

    1. Quat sanitizer dispenser was dispensing 0 ppm of Quat sanitizer during inspection. [CA]: Discontinue use of Quat sanitizer until it is able to dispense 200 PPM of Quat Ammonium sanitizer. Discussed proper ware-washing and sanitizing procedures with PIC. 2. 3 comp sink at bar area not functioning properly. Per manager, detergent and sanitizing dispenser was removed because it was not properly functioning. 3 comp sink is not being used per mananger. [CA]: Repair 3 comp sink and ensure it is in good condition. 3. Unapproved plastic containers without handles being used as scoop for kernel and salt. [CA]: Discontinue storage of handle-less food equipment not approved for use as scoops. Provide food-grade scoops with handles for scooping.
