    In the kitchen area, at the drain of the ware washing sink, there were two dead cockroaches. Per staff, they have regular pest control. [CA] Clean and sanitize area of dead cockroaches. [COS] Chef discarded the cockroaches and cleaned the affected area.

  • K01: Demonstration of knowledge; food safety certification

    There is no Food Safety Certified individual or any food handler cards for staff available upon request. NOTE: Per chef, he started at the facility approximately 3 weeks ago. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire. Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times.

    In the kitchen area, at the hand sink, the window was open with no mesh screening. [CA] Openable windows shall be screened to prevent the entrance and harborage of animals, birds, and vermin. [COS] Chef found the mesh screening and reinstalled it.

    Chlorine sanitizer in the ware washing machine was measured at 0 ppm. No active warewashing was observed at time of the inspection. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM. [SA] Facility will manually wash, rinse, and sanitize dishes in the two compartment sink and an additional plastic tub until the machine is repaired/serviced.
