    Staff were observed thawing reduced oxygen packaged tuna under running water in the three compartment sink. Per manufacturers instructions, it shall be thawed under refrigeration. [CA] Ensure to follow manufacturer's directions for food processing. (thawing, reheating, etc). [COS] Items were moved to the refrigerator to finish thawing. Educated staff to thaw, cool, and wash food items at the two compartment prep sink that is available.
