    Observed air curtain not on while back door left open. Observed a stick propped into the switch to prevent turning on. Per PIC, the fan is loud and not able to hear phone calls and communication between employees. [Corrective Action] Ensure air curtain is on while leaving back door open. A screen door may be installed. [Corrected on Site] Stick removed from the switch .

    1. One of the cold holding chest is in-operable. No food storage observed at time of inspection. [Corrective Action] Ensure refrigeration equipment is properly functioning. 2. Upper items in the 2 door upright cooler (right) were measured above 41 degrees Fahrenheit. [Corrective Action] Refrigeration unit shall be able to maintain PHFs at or below 41 degrees Fahrenheit at all locations of the refrigeration unit.

  • K07: Proper hot and cold holding temperatures

    Popcorn chicken and chicken salad in the 2 door upright cooler (right) at the upper areas of refrigeration unit was measured at 49 degrees Fahrenheit. Per PIC, the food items were delivered at 8:40 AM. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit. [Suitable Alternative] PIC moved the foods into freezer units and the other refrigeration unit.
