ROUTINE INSPECTION

Facility has a 2 compartment sink that is being used as a hand sink in the back prep area. Discussed with manager that remodeling of the facility or a change of ownership may require the facility to install a 3 compartment sink with drain boards. Hot and cold holding temperature sticker provided. Manager asked to email reports on top of the physical copy printed out on site. Report will be emailed to donuthunk@gmail.com.

TPHC guidance provided. [COS]: Food was time marked to be discarded at 11 am, 4 hours after it was cooked. Specialist observed food voluntarily discarded at 11 am by PIC.
