    1) Oven observed to not be under ventilation hood. [CA] All cooking equipment will be kept underneath ventilation hood. 2)Gap observed in ventilation hood filter. Per operator filter is loosely fitting and was taken off to prevent falling hazard. [CA]Repair filter and ensure filters are fitted in the mechanical exhaust ventilation over cooking equipment, provide spacer or correct sized filters.

    Chili measured to be 85F. Per employee chili was not reheated prior to being placed inside hot holding dispenser and bag was opened. [CA] RTE food from commercially processed, hermetically sealed container may be reheated to >135°F for hot holding. [COS] Chili was VC&D (see VC&D report) new bag of chili was reheated in hot water bath prior to being placed inside dispenser. Facility shall keep dispenser on to preheat unit.

    Hot dog in an ice bath measured to be 49F. Ice bath observed to only have ice at the bottom of hot dog container. [CA] PHFs shall be held at 41°F or below for cold holding. Ensure ice bath containers water and ice with enough ice water to submerge sides of PHF containers. [COS]Hot dogs were deep fried into corn dogs. Water and ice was added to ice bath for later hot dogs.

    Corn dogs observed to not be on TPHC log. Prepped foods observed to be under heat lamp and per SOPs , PHFs are kept on TPHC. Corn dogs measured to be 168F. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Corn dogs were added to TPHC log.

    Grilled onions observed to be inside upright warming cabinet. Cabinet observed to be off. Onions measured to be 156F and per employee had been just cooked. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Ensure equipment if operational and on to actively hold temperature. [COS] Warmer was turned on and onions will be checked if they need to be reheated once warmer is up to temperature.
