    Several open containers of sauces (mayonnaise, tartar, big arch sauce, big mac sauce, spicy sauce and ranch) held at room temperature for more than 4 hours. Manager stated all items are subject to Time as Public Health Control (TPHC), however the time marking is set to discard within 24h. Manager explained that some items are kept beyond the 4 hour limit. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Manager directed employees to discard the sauces. Newly open containers are time marked to discard within 4 hours of removal of temperature control.

There are no drainboards to this dishwasher, only the adjacent drainboard from the 3-compartment sink [CA] - Mechanical warewashing machine shall be installed and operated after plans have been submitted and approved by this department. All warewashing equipment shall be provided with two integral drainboards. Submit plans to this department for the dishwasher
