    Sanitizer bucket was measured at 50PPM at the time of inspection. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium). [COS] Employee changed out bucket and adjusted sanitizer (chlorine) within bucket. Re-measured at 100PPM.

Active ware-washing was taking place at the time of inspection. [CA] Maintain chlorine in mechanical ware-wash machine at 50 PPM. [SA] The 3-Compartment sink was set up to wash, rinse, sanitizer (100PPM). Minor: Employees are placing knives in between two prep tables. [CA] Discontinue placing knives in locations that do not get cleaned regularly. Recommend getting a magnet or knife holder. [SA] Employees placed knives within the 3-compartment to be wash, rinse, sanitized.
