Repeated violation: Some recently washed utensils were stacked together on the utensil storage shelf. [CA] Air dry all clean utensils before staking them together.

Chicken strips stored on hot cases were measured between 115 oF and 120 oF. [CA] All potentially hazardous foods like meat, seafood, poultry, dairy products, cooked vegetables, cooked cereals, greens, and diced tomatoes shall always be held at 41°F or below or at 135°F or above. Monitor the temperature of the food products stored inside the case regularly. The case’s temperature must also be kept at or above 135 oF. The PIC time coded the product to be used with the next 2.5 hours (SA).

There are some dirt buildup on the floor below the soda dispenser, the storage shelves, and below the cook-line. There are some dirt accumulation on the floor sink located below the preparation sink and food residue accumulation on the wall by the garbage bin storage area as well. [CA] Please conduct a regular thorough cleaning of the floor and floor sink areas.
