ROUTINE INSPECTION
Went over with employees how to properly setup and use the 3 compartment sink and left the sticker for proper setup. Inspection completed with an employee translating for speaking with kitchen staff.

- K34: Warewash facilities: installed/maintained; test strips
There are not any chlorine test strips. [CA] Obtain and use the test strips to monitor the concentration of sanitizer at the 3 comp sink and towel buckets.
- K44: Premises clean, in good repair; Personal/chemical storage; Adequate vermin-proofing
Observed personal belongings stored on prep tables and on food items in the kitchen. [CA] Please provide lockers for personal belongings.
- K01: Demonstration of knowledge; food safety certification
The cooks and employees that are preparing food do not have a food handler card or food safety certificate. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.
- K23: No rodents, insects, birds, or animals
Observed flies in the kitchen and the back door kept open. [CA] Take effective measures t eliminate the floes from inside the kitchen. Keep the back door closed or install a screen door or air curtain.
- K36: Equipment, utensils, linens: Proper storage and use
There is a plastic to go cup used as a scoop. [CA] Use a scoop with a handle and store it with the handle not touching the food inside.
- K14: Food contact surfaces clean, sanitized
Observed the employee just rinse off the cutting board and then put away as clean and ready for reuse. [CA] This must be washed properly. Wash, rinse, and sanitize. [COS] The employee put it into the sanitizer.
- K40: Wiping cloths: properly used, stored
Observed used wiping towels on prep tables. [CA] Store the used towels in sanitizer between each use.
- K30: Food storage: food storage containers identified
Observed containers of food in the walk in uncovered. [CA] Please cover all food in the walk in. If cooling you may leave uncovered and in a location to avoid possible contamination.
