ROUTINE INSPECTION
Quaternary ammonia measured at 100ppm for active manual sanitizing. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Employee refilled sanitizer sink with sanitizer. Sanitizer measured at 200ppm. Resanitized equipment. Observed employee rinse equipment in sanitizer for less than 1 minute. Education provided. Ensure equipment is fully submerged in sanitizer solution for at least 1 minute.
Cooked chicken in warmer top tier measured at 131F-134F. Per PIC, chicken was cooked 1 hour ago. PIC observed warmer was turned to low setting [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Chicken reheat to 165F. PIC turned up warmer and continue hot hold chicken in warmer.
Peeled silicon observed on ice machine. Peeling paint and dust observed in the hood where oven is located. [CA] Remove silicon and peeling paint to prevent physical contamination.
Thermometers for hot holding units in kitchen and near bbq unit were broken and inaccurate. [CA] A thermometer +/- 2°F shall be provided and correctly located in each hot and cold holding unit containing potentially hazardous foods.
