[CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. Discontinue overfilling the inserts above the fill line. FOLLOW-UP INSPECTION

This is the first follow up inspection after the routine inspection where the facility was closed for an active rodent infestation. A completed and signed checklist for reopening and pest control report was provided prior to this inspection. Observations: K14: The dishwasher measured at 50 PPM of chlorine. K23: No evidence of an infestation (droppings, gnawing, rub marks, or live/dead bodies of rodents) were observed. Insects in the light were removed. A snap trap was triggered, per staff it went off when they moved the large flat grill to clean. K35: Ensure to submit plans for the change of equipment by deadline given at the routine inspection. K45: There are holes in the following areas: - Above the microwave where a cord goes down to the receipt printer. - On the pony wall between the two sandwich prep coolers where an electrical conduit goes into. - Behind the beer tap cooler in the bar that leads into the kitchen near the handwash sink. Facility is okay to reopen. Submit proof of corrections for sealing off gaps within 24 hours. Facility's city business license shows the business owner as "Mimosas Cafe LLC" with a business name of "The Tender Spot". District Specialist will verify ownership has indeed not changed.

FOLLOW-UP INSPECTION

This is a follow up inspection to verify that all major violations mentioned on 5/20/25 inspection report have been addressed. Major violations have been addressed and found within complaince: - K06: Adequate hand wash facilities supplied, accessible. All hand wash station are fully stocked and operational at the time of inspection. - K07: Proper hot and cold holding temperatures. All prep tables are keeping PHFs under 41*F at the time of inspection. See measured observations. Per PIC, they may change one of the prep tables for a new one. If facility changes unit it must be like for like or facility will have to go through plan check. Units (prep tables) on site: True refrigeration (2x) and Enhanced refrigeration. - K14: Food contact surfaces clean, sanitized. Sanitizer within the dish washer was measured at 50PPM at the time of inspection. See measured observations. Continue working on any other violations mentioned on 5/20/25 inspection report.

Repair, adjust, relocate, or replace units if necessary. [SA] PIC will discard compromised PHFs at 1:00pm. Observed chile verde in a warmer unit that measured at 89F. Per PIC and cook, the food is reheated on the stove and then transferred to the warmer. Once the chile verde was stirred, the temperature reached 141F. [CA] Ensure PHFs are properly hot held at 135F or above.

    Observed meats thawing on cart. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.
