Facility is using time as a public health control for cartons of milk at time of service. Milk is held at room temperature on a plastic tray for self service. Per PIC, the milk is out for 10-15 minutes before it is restocked. [CA] Provide written procedures and time marking for PHFs utilizing time as a public health control (TPHC). [COS] TPHC written procedures were provided and filled out on site.
Per PIC, the restroom in the kitchen area is solely for use by the neighboring office staff. Per PIC the office staff of the business do not operate as part of the food facility. Note: Kitchen staff and customers use restroom facilities that are located in the hallway outside of the dining area. [CA] The "person in charge" shall ensure that persons unnecessary to the food facility operation shall not be allowed in the food preparation, food storage, or warewashing areas.
