    1. MAJOR. Cheese in the inserts of the 2 door prep cooler was measured at 56 degrees Fahrenheit. Observed about a handful left in the insert. Per employee, during the lunch rush, the lid of the 2 door prep cooler was left open and that they go through the container of cheese within 30 minutes. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit. [Suitable Alternative] The rest of the cheese was finished and new container from the bottom of the 2 door prep cooler was brought up. 2. Sliced tomatoes and diced tomatoes in the inserts of the 2 door prep cooler was measured at 46 and 43 degrees Fahrenheit respectively. Cheese and flan in the above counter cooler was measured at 43 degrees Fahrenheit. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit.
