The containers were covered with a lid and double stacked. [CA] Ensure PHFs are properly cooled from 135F to 70F within 2 hours and from 70F to 41F within 4 hours. Use rapid cooling methods such as spreading product out on shallow pan, smaller portions, frequent stirring, ice baths, ice paddles, ice as an ingredient and/or blast chiller. Discontinue cooling PHFs in the food prep unit and discontinue covering cooling items with a lid and double stacking. [COS] PIC relocated cooling items that were cooked approximately 1 hour ago into the walk-in cooler to finish cooling.

FOLLOW-UP INSPECTION

This is a follow up inspection to verify that all major violations mentioned on 8/27/25 inspection report have been addressed. Major violations have been addressed and found within compliance: - K07: Proper hot and cold holding temperatures. Walk in has been repaired properly and keeping all PHFs below 41*F. See measured observations. - K09: Proper cooling methods. Foods within the freezer chest have been cooled down properly. Facility will be placing PHFs within steel containers and placing them into the reach in freezer to cool down quicker. See measured observations. Continue on working on all other violations mentioned on 8/27/25 inspection report.
