The impound for the following items have been lifted: JL05082026A: Hand washing sink, Model: 600HS12 JL05082026A: Three compartment sink with right drain board, Model: SE18183R Temporary authorization for use of the single drain board three compartment sink has been granted as this facility completes this construction project. It was discussed that warewashing shall be done in batches to accommodate the use of only one drain board. This facility's service volume is low and operation time is limited which supports the batch washing method. If at any time this cannot be conducted safely, this facility shall not operate. Facility okay to operate.

FOLLOW-UP INSPECTION

This facility has exceeded its required compliance date for the submission of all required items for plan review submission for the unapproved installation of the hand washing sink and three compartment sink. The unapproved items shall be impounded at this time. Refer to impoundment report for details. Due to the inability to use the handwashing sink and three compartment sink, this facility can no longer has the capacity to conduct proper handwashing or warewashing. Facility is to immediately cease and desist all operations, including but not limited to food preparation, service, handling, distribution, and sale. Subsequent follow-up inspection after first follow-up shall be billed $298/hour, minimum one hour, during normal business hours (Monday - Friday, 7:30 AM to 4:30 PM), and $645 for a minimum of two hours, during non-business hours, and upon inspector availability. The posted placard is property of the Santa Clara County Department of Environmental Health and shall not be removed, covered-up, relocated, tampered, or copied. Failure to comply may result in enforcement actions per County Ordinance Code Section B11-55. If this facility is found to be in continued operation without a permit may incur a penalty of three (3) times the operating permit fee, and fee(s) for re-inspection(s) charged at the current hourly rate approved by the Santa Clara County Board of Supervisors. Penalties and fees incurred due to enforcement activities must be paid in full prior to the issuance of an operating permit.

    Plans for installation of the three compartment sink and handwashing sink have not yet been received by this agency. Plans shall be submitted to the Plan Check Department at: dehplancheck@deh.sccgov.org by 5/3/26 or additional enforcement may be conducted. [CA] Any new equipment/sinks must have plan check plan submittal and approval before installation.

    Observed the handwash sink was partially obstructed by a shelving unit. [CA] Keep the handwash sink easily accessible at all times.

    The unapproved three compartment sink is equipped with a single 18 inch drainboard with sink compartment sizes at 18" x 18" x 12" [CA] All warewashing equipment shall be provided with two integral drainboards.

    Measured the sanitizer concentration in the multiuse wiping cloth bucket above 200 ppm chlorine. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

    Measured multiple PHF left out at the back preparation counter at their respective temperatures: - Bulgogi at 50F - Marinated pork at 56F - Spam at 70F The PIC stated the above foods were removed from the upright cooler/opened from can approximately 45 minutes prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] The foods were relocated to the two door upright cooler to cool.
