[CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Manager discarded the carnitas due to quality issues and had the beef birria reheated to 165F.

This is the first follow up inspection where the facility was closed for an active cockroach infestation. A completed checklist for reopening and pest control report was provided prior to this inspection. Observations: K23: No evidence of a vermin infestation was observed. cove base and gaps in the paneling of the cook line wall have been repaired. Facility is okay to reopen. Continue to correct any and all pending violations.

This is a follow up inspection for the routine inspection conducted on 08/27/2024. Observations: K07: All PHFs were measured at 41°F or below or at 135°F or above. K21: At the hand washing station, the knee press pedals have been separated and no longer press together allowing for manual control of water temperature. K35: The upright cooler has been repaired. Ambient temperature of the unit measured at 40°F. Continue to correct all pending violations.
