ROUTINE INSPECTION
Note: 1. There is no food safety manager certified person in the facility. 2. The restaurant conducts cooling of multiple sauces and gravies. Therefore, the risk category shall be changed from Risk Category two to Risk Category three, the program element from FP10 to FP11. The change will increase the the frequency of inspection and henceforth the annual Environmental Health permit fee.

- K36: Equipment, utensils, linens: Proper storage and use
Some clean working utensils including the slicer were stored in unclean container/surface. [CA] All reusable utensils including the ice scoop must be stored on clean surface/container in between use.
- K40: Wiping cloths: properly used, stored
Multiple wet/soiled wiping cloths were stored on the counters and on the shelves above the wash and preparation sinks. [CA] Wet/soiled wiping cloths must be stored in a bucket that has standard sanitizer concentration in between use which is 200 ppm quaternary ammonia or 100 ppm chlorine (bleach).

There is not a food safety manager certified person in the facility. [CA] Someone from the facility must take a food safety certificate class within two months and keep a copy of the certificate on file. - K06: Adequate handwash facilities supplied, accessible
The handwash sink located back in the three compartment warewash area was partially blocked by a movable shelf. [CA] Make the handwash station easily accessible for employees to wash hand whenever its needed.
- K44: Premises clean, in good repair; Personal/chemical storage; Adequate vermin-proofing
A couple of open cup employee drinks were stored on the preparation tables. [CA] To prevent possible contamination, employees may only drink with covered cup containers and store their drink in designated areas.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
The wet rice grinder observed back in the kitchen area is not NSF/ANSI approved, or ETL/UL sanitation listed. [CA] Equipment used in the facility must be commercial grade one. Replace the grinder with an American National Standards Institute (ANSI) accredited certification program (e.g. NSF, UL EPH, UL Sanitation, CSA Sanitation, or ETL Sanitation) equipment one.
- K09: Proper cooling methods
Cooling of freshly cooked sauces was being conducted at room temperature near the preparation table. [CA] All hot-held food products must be cooled from 135 OF to 70 OF within the first two hours and from 70 OF to 41 OF with another four hours by: (1) Placing the FOOD in shallow pans. (2) Separating the FOOD into smaller or thinner portions. (3) Using rapid cooling EQUIPMENT. (4) Using containers that facilitate heat transfer. (5) Adding ice as an ingredient. (6) Using ice paddles. (7) Inserting appropriately designed containers in an ice bath and stirring frequently. The manager demonstrated the proper cooling procedure using an ice bath and smaller portions.
