1. Measured ambient air temperature of cold display case holding at 50F. [CA] Maintain all cold PHFs held at or below 41F. [COS] Operator directed to store PHFs to another refrigeration unit. 2. Found broken lid for bulk bins at prep area. Observed bag of food stored in bin. [CA] Replace lid, ensure lid is in good repair.
Major: Measured cheesecake with fruit and brownies holding at 55F in cold display case for less than 4 hours. [CA] Maintain all cold PHFs held at or below 41F. [COS] Operator voluntarily discarded PHFs in trash. Minor: Measured sliced of cheese cake holding at 47F at grab n go section for less than 4 hours. [CA] Maintain all cold PHFs held at or below 41F.
