  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    The refrigerator next tothe cook line drips water inside. [CA] Place something under the drip to contain it and have it repaired as soon as possible. The plastic liners in the bar refrigerators are beginning to have mildew on them. [CA] Wash and sanitize the shelf liners and inside the units. The potatoes are soaking in a clean garbage bin that has been used as a food container. [CA] The bin must be a food grade approved bin for direct food contact. [COS] The manager discarded the potatoes.

    Observed refrigerator without a thermometer. [CA] Provide a thermometer in each unit to monitor the temperature. [COS] The manager placed a thermometer in each unit.

  • K14: Food contact surfaces clean, sanitized

    The two main cutting boards at the cook line are both deteriorated. [CA] Discontinue use of these cutting board. [COS] They were switched out with non deteriorated boards.

  • K45: Floor, walls, ceilings: built,maintained, clean

    The floors under equipment are soiled in areas shown during the walk. [CA] Thoroughly clean the floors and scrape the grease off where needed. The walls around the dish machine have accumulated mold/mildew. The walls are soiled in several areas throughout the kitchen. The walls have begun to deteriorate in some areas. [CA] Repair, clean and repaint the walls where needed

  • K36: Equipment, utensils, linens: Proper storage and use

    Observed paper cup being used as a scoop and kept in the food bin. [CA] The paper cup must not be reused as a scoop and stored in the food bin. You may use a scoop with a handle and store it with the handle not touching the food. [CA] The manager discarded the paper cup.

  • K38: Adequate ventilation/lighting; designated areas, use

    Observed the lighting to be very dim in the ice machine area. [CA] Provide proper sized light bulbs for proper lighting.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    The hand sink water did not drain properly and went onto the floor. [CA] Clean the drain cover so that the water is able to drain correctly. [CA] The manager cleaned out the drain cover and it drains correctly.
