Operators stated the facility receives monthly pest control services, and the last service was conducted about 3 weeks/one month ago, which is when the sticky traps were last replaced. Operator also stated that since construction started across the street, there have been more notable pest issues (particularly flies). ***Have a professional pest control company service the kitchen within one week. Email the subsequent 3 pest control service reports to mindy.nguyen@deh.sccgov.org *** Other notes: - Specialist inquired about the HACCP plan required for USDA National School Lunch/Breakfast programs. Operator stated that they had emailed the HACCP plan to DEH a year prior. Facility was able to show food preparation documents that referenced parts of the HACCP plan (e.g. "HACCP PROCESS: PROCESS 2: SAME DAY SERVICE"), as well as an interactive computer program that appeared to align with HACCP protocols. Specialist will conduct file review and may follow up.

    Measured warm water at the employee restroom handsink to be 93F, then the temperature dropped at stayed at 89F. [CA] Provide warm water (100 - 108F) at the handsink.

    Observed dead nymph cockroaches in the following locations: - 1 in a sticky trap on the floor next to the kitchen handsink, against the wall - 1 in a sticky trap on the floor in the dry storage room, under a shelf near the door. No other evidence of vermin was observed. [CA] Keep facility clear of vermin/cockroaches. See notes below.

Notes: - Interviewed Kitchen PIC about their HACCP Plan and they were unaware of it. Observed and reviewed temperature logs for the refrigeration units, facility does not maintain sanitizer logs. PIC requested a copy of their HACCP plan from their district office during time of the inspection. The HACCP plan was unavailable for review. Provide a copy of the HACCP plan to this department to Alexander.Alfaro@deh.sccgov.org. - Cooked Ready to Eat pizza sourced from Tasty Subs and Pizza on 528 Lawrence Expwy. Recommend maintaining a temperature log of received temperatures for the pizza. - Sticker on Proper Refrigeration Storage provided.

    In the staff restroom, at the hand sink, hot water was measured at a peak of 83F and went down to a consistent 82F. [CA] Handwashing facilities equipped with a mixing valve that is not readily adjustable at the faucet, shall provide warm water at least 100°F, but not greater than 108°F.

    1. In the three door upright cooler, on the top shelf, liquid eggs were found stored above ready to eat foods such as cheese and yogurt. 2. In the upright freezer, above ready to eat foods, raw liquid eggs were stored. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    Accumulation of water, ice, and debris at bottom of drink cooler. One interior line of drink cooler appears to be leaking into inside of cooler. Drain line for cooler appeared to be clogged that caused stagnant water at the bottom of the cooler. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions. Note: Francesco was cleaning and draining drink cooler during inspection but interior line is still leaking water into inside of cooler.
