    1. Mop sink has come off the wall within the janitorial sink. [CA] Repair the mop sink and seal properly with silicon. 2. Tiles within the walk in are damaged and is starting to sink in. Per PIC, they have a contractor that will be addressing the issue. [CA] Replace broken floor tiles with a smooth and of durable construction and nonabsorbent material that is easily cleanable.

    Cardboard is being used to line the shelves. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

    Carnitas in metal tray that are cooling were completely closed with foil at the time of inspection. [CA] When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling. [COS] PIC loosely opened the aluminum foil.
