    Time marking for sushi rice is not available. Per the manager, a log kept previously on the wall was removed and hasn't been replaced yet. Temperature of the rice still above 135. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Manager time marked the rice to discard after 4 hours.

    Old rodent dropping observed below the dishwasher. Per the manager, facility is serviced biweekly, pest reports were provided for review. [CA] Clean and sanitize areas of old droppings.

ROUTINE INSPECTION

At start of inspection, measured various PHFS inside walk in cooler at 53F and ambient temperature was 53F. However by the end of the inspection, ambient temperature dropped to 41F, foods started to cool also.

Light fixture above 3-compartmetn sink is inoperable. [CA] In every room and area in which any food is prepared, manufactured, processed or prepackaged or in which equipment or utensils are cleaned, sufficient natural or artificial lighting shall be provided.
