Facility plan to install two deep fryers. Submit plans and application to the Plan Check Program at our department. Facility lacks a CDFA license to operate the soft serve machine. Facility shall acquire the CDFA license prior to using soft serve machine.

    Soft serve mix in the soft serve machine was measured at 49 degrees Fahrenheit. Per PIC, the soft serve has been in the machine for about 2 days. [Corrective Action] Ensure Potentially Hazardous Foods are maintained at 41 degrees Fahrenheit or below. [Suitable Alternative] Soft serve will not be sold to customers until machine has been repaired. The soft serve will be voluntarily discarded.
