    The sanitizer at the dish washing sink is at about 500ppm. [CA] The sanitizer must be at 200ppm quat. The sanitizer must be diluted to give 200ppm quat.

    The shelves and racks in the walk in refrigerator are soiled with encrusted food particles and black accumulation. [CA] Clean and sanitize these shelves and racks.

    The thermometer on the left side of the deli case is not working. [CA] Be sure that a working thermometer is being used so that the correct temperature can be monitored in the refrigerator.[COS] Thermometer placed in the unit.
