The lighting above the dish washing sink area is out. [CA] This is a repeat violation. Repair the lighting in this area by 7-7-26.

There are several areas on the kitchen floor where grout is missing and it is causing standing water and debris.. [CA] Repair the floor.

The cooks do not have a probe thermometer. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.

The dish washing sink chlorine read 0ppm. [CA] the machine must reach 50ppm chlorine. The dishes must be sanitized at the 3 compartment sink after washing. Check that the quat reaches 200ppm. The dish washer employee was sanitizing the dishes in the 3 comp sink.

Observed brown thick accumulation under the cook line equipment. [CA] Thoroughly clean and sanitize the equipment.

Observed missing grout in several areas throughout the restaurant and mold/mildew is accumulating in the cracks. [CA] Thoroughly clean the floors and remove the mildew growth from inside the missing grout lines. When the remodel is done also repair the floors where the grout is needing replacement. Water accumulates under the bar and is beginning to have a bad smell. [CA] Clean up the water and sanitize the floor.

Observed the cutting board to be deteriorated. [CA] Replace the deteriorated cutting board.

The sanitizer at the bar sink was at 0ppm quat. [CA] The quat must be kept at 200ppm. [COS] The quat sanitizer was added to the sink and rechecked at 200ppm.

Observed the area over the dish washing machine to be dim. [CA] Replace all of the missing and burnt out light bulbs throughout the kitchen.

Observed the lights above the dish washing area to not be working. [CA] Repair the lights that are out for proper lighting.

Observed the drain to be clogged at the back 3 compartment sink and the water running onto the floor when we turned it on. [CA] The water must drain properly and completely. [COS] The drain was plunged and went down completely.

Observed towel sanitizing buckets without sanitizer in them. [CA] The towels must be submerged in the sanitizer.

Observed the brown table and also the white plastic cutting board to be deteriorated. [CA] The cutting boards must be replaced.
