The existing two double compartment sinks are directly connected to the grease trap located below them. It is advisable to have at least one of the two sinks to have an indirect connection to prevent contamination from possible back up of sewage if the sinks are used for food preparation. Also the only handwash station in the kitchen is located by the restroom. It is advisable to have a designated handwash station by the food preparation area. 4. According to the USDA guideline, schools serving lunch through the School Lunch program must have a written HACCP plan in place. Please keep a copy in the cafeteria.

A single cricket was observed on traps, below the boxes, and behind the open top freezer located in the custodian room. [CA] Eliminate vermin from the facility through proper storage of food, utensils and equipment, conducting regular cleaning, and performing a regular professional pest control intervention.

There was a very low sanitizer concentration on the manual three-compartment ware washing sink. [CA] Whenever sanitizing of utensils/equipment is conducted, the sanitizer concentration maintain in the sanitizing compartment of the manual warewashing sink must be maintained at 200 ppm quaternary ammonia or 100 ppm chlorine, unless otherwise specified by manufacturer of the chemical.

There was very low sanitizer concentration on one of the sanitizer buckets. [CA] Maintain the sanitizer concentration on the sanitizer buckets at 200 ppm quaternary ammonia. 100 ppm chlorine (bleach), 272 ppm -700 ppm lactic acid levels.
