    1. Staff were observed drying dishes with a microfiber cloth towel. [CA] Equipment and utensils must be air dried or properly stored to facilitate drying after sanitizing. 2. Beer tap dispensers had an accumulation of grime and were not clean to sight and touch. 3. The interior back panel of the ice machine has a pink biological growth. [CA] Ensure to maintain food contact surfaces clean to both sight and touch. Sanitize as required.

Note: 1. Per PIC, Facility is receiving cooled cooked food from a sister restaurant PR0367995- SP2 Communal Bar + Restaurant. Provide an SOP to District Specialist for the facility's practice of sending/receiving food. 2. Facility has a vacuum sealing machine in the back storage bar area, per PIC they use it during winter time for a cocktail. Provide an SOP for the process of the vacuum sealed food items. 3. The facility's premises have extended into the unit next door. Per PIC, the unit used to be an office and they were in works to extend the facility prior to 2020. Area had a matching interior and bar set up, however, it appeared to only be used for storage. Ensure to submit plans to this department if planning to open the second part of the facility.
